Sunset time is indeed 21:37. I think 16:56 refers to the number of daylight hours on that date, ie 16 hours and 56 minutes between sunrise and sunset. Sunset in Scotland is gradual compared to the Tropics, so you may get good photos before and after 21:37. Good luck!
