I googled and the sunset time during May 27 2019 will be at 21:37 but the hours of light will be at 16:56. I am not sure which hour go to if I want to take a sunset photo.... Sunset time is indeed 21:37. I think 16:56 refers to the number of daylight hours on that date, ie 16 hours and 56 minutes between sunrise and sunset. Sunset in Scotland is gradual compared to the Tropics, so you may get good photos before and after 21:37. Good luck!
